Felt holds compound well and stays put during use, so you're not constantly reloading. Keep a dedicated belt per compound colour/grit if you're running more than one, since felt will carry traces of whatever it last held.

This is a great all-ground epoxy for timber, metal, plastic.

Best belts for the job. Removes material fast and precise. Still useful when worn and not a lot of material is required to be moved.
Makes surface grinding and distal tapers almost effortless. Its built like a tank and is more than accurate enough for making knives and cutting tools.
You'll definitely want to make sure your grinder is secured well though, the SOGSA is quite heavy and sits pretty far out from the base. Probably best to use on a stand thats bolted down rather than mobile.
